Babies and A Quick Easy Dinner

Last night I had the pleasure of watching my cousin’s adorable baby girl, Izzy. She is too cute for words and I have had major baby fever lately. So spending time with Izzy was just what I needed. She is such a good baby.

While watching her it made me realize how tough of a job you working Mom’s have. To work all day, get home to enjoy some time with your little ones and still find time to make a healthy dinner too. For you all, it may not seem like there are enough hours in the day. If you are lucky enough to stay at home with your little ones I am sure you are still busy chasing after them or changing diapers, which may also make it harder to make a quick and healthy dinner. I am not a Mom yet and look forward to being one sometime in the near future. I always want my health to be a priority and to set a good example for my kids by making healthy and delicious food. I am just realizing I may not have as much time to make some of the more elaborate dinners I can make now while it is just the hubby and me.

So for all you working or stay-at-home mommies, this recipe is for you. I wanted to find something that I could easily make while spending time with sweet Izzy. Chicken Artichoke


  • Pack of organic boneless chicken breast
  • Jar of Trader Joe’s Artichoke Antipasto
  • 1/2 lemon- juiced and zested
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste
  • 1 tbsp chopped garlic
  • 1 Trader Joe’s frozen basil cube ( I didn’t have it so I used dried basil)


Preheat oven to 375F.

Season chicken with olive oil, lemon salt, pepper, basil and garlic. Place on a baking sheet covered with tin foil. Add a generous scoop of artichoke antipasto onto the chicken. Place in the oven and cook for 20-25 minutes or until done.


I paired this with garlic and lemon roasted cauliflower. I bought the already cut organic cauliflower from Whole Foods. Spread it out on a baking sheet and sprayed with organic olive oil. I then added lemon juice, garlic powder, salt and pepper. Mix together with your hands and roast for 15-20 minutes on the top oven rack. You can also add in some already cut sweet potatoes if you need a little more. I usually do that for the hubby, but didn’t do it last night.


Makes for an easy and healthy dinner that will satisfy your taste buds. You will be happy that you didn’t have to spend too much time in the kitchen or preparing for the meal, leaving you with more time to spend with your little ones!
