Go Green To Get Lean!

I hope everyone had a great St. Patty’s Day and celebrated with lots of green food, drinks and some Irish beverages :)! I know I sure did. Had a blast on Saturday with two of my best buds, Iana & Kelsey and my beautiful sis! My sister and I are extremely Irish and somehow ended up at a Mexican restaurant. As my sister said, “St. Patty would be so disappointed in us!”

Sunday I woke up not feeling my best, missed my typical Sunday yoga class and felt like I was in a major need of a detox.  If you let loose this weekend and need to detox this week I have got some good recipes for you!

Dark_Green-Vegetables

One of the best ways to tone up and get lean muscles is to incorporate lots of green veggies in your diet. Adding greens to your diet will help detoxify your body and are the most concentrated source of nutrition of any food you can eat. According to Livestrong, eating vegetables can increase energy efficiency and provide vitamins and minerals to aid in muscle contraction and dealing with oxidative stress.  As a general rule, you should aim to eat at least five servings of vegetables daily (that’s about 2 1/2 cups of cooked vegetables). I try to incorporate them in most all of my meals and snacks!

St. Patrick’r Day isn’t the only day you should celebrate all things green. If your looking to detox & re-hydrate from your St. Patty’s Day festivities, try these lean, & green detoxing meals.

Breakfast

Try my energizing Green Energy Smoothie, packed with my favorite superfood Kale! The fiber (5 grams in one cup) and sulfur in kale aid with digestion and liver health. The Vitamin C it contains hydrates your body and increases your metabolism, leading to weight loss and healthy blood sugar levels. The fiber in kale also lowers cholesterol. (Vegkitchen)

Snack

Hydrate and replenish your body with my detoxifying Green Detox Smoothie. This makes for the perfect pick me up snack and will fend off those mid-morning or late afternoon sugar cravings!

Ingredients

  • 1 cup of coconut water
  • 1 cup of water
  • 1/2 organic english cucumber
  • 2  organic celery stocks
  • 2-3  organic kale leaves ( torn from the steam)
  • 1/2 cup frozen organic spinach
  • 1/4 cup fresh or frozen parsley
  • juice of one lemon
  • 1 granny smith apple, cut into slices

Directions

Add all ingredients to your vitamix or blender and blend together. I like to blend everything until it takes on a juice like consistency. This makes a big batch and you can save this delicious and nutritious smoothie for snacks during the week.

Lunch

Enjoy the flavors of Mexico in this simple Spicy Shrimp & Avocado Salad with Cilantro Lime Vinaigrette.

Ingredients

  • 6 shrimp
  • 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • Juice of 1/2 a lime
  • 1 cup of organic spring mix  
  • 1 cup of organic spinach
  • 1/4 cup of diced  organic cucumber
  • 2 tbsp of diced red onion
  • 1/4 cup of organic red onion
  • 1/4 cup of diced organic cherry tomatoes
  • 1 Tbsp crumbled feta

Place frozen or fresh shrimp in a pan with 1/2 cup of water. Bring to a simmer. Add cumin, cayenne pepper and juice of 1/2 a lime. Meanwhile place all salad ingredients in a bowl. When shrimp is cooked through add to salad. Top with Cilantro Lime Vinaigrette.

Cilantro Lime Vinaigrette

Ingredients

  • 1/3 cup extra virgin olive oil 
  • 1/2 cup organic greek yogurt
  • 1 1/2 tbsp lime juice
  • 2 garlic cloves
  • 1 tbsp white vinegar
  • 1 bunch organic cilantro
  • 1 tsp sea salt

Place all ingredients in vitamix or blender and blend until smooth.

Dinner

 Spicy Ground Chicken Collard Wrap

Ingredients 

  • 2 whole collard green leaves
  • Lean Ground Chicken
  • 6 cherry tomatoes, diced
  • 1/2 red onion
  • 1/2 shredded green cabbage
  • 1/2 shredded red cabbage
  • 1/2 white onion
  • Juice of one lime
  • 1/2 cup of mushrooms
  • 1/4 Avocado, thinly sliced
  • 1 tbsp cilantro
  • 1/4 tsp chili powder
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne Pepper

Directions

Heat an oiled skillet and add onions. Let onions simmer for 2 minutes then add ground chicken. Brown ground chicken and add mushrooms. Add 1/2 cup of warm water and all spices. Cover and let simmer until chicken is cooked through.

Meanwhile mix tomatoes, red onion, red & green cabbage, and lime juice for a Pico de Gallo style salsa.Once chicken is done, place on two collard green leaves. Add salsa, avocados, cilantro and left over Cilantro Lime Vinaigrette.

Give yourself a few days of eating lean & green and make sure you get at least a 30 minute sweat session in each day to help flush all the toxins out of your body. By the end of the week you will feel leaner, refreshed and rejuvenation!
