My favorite way to eat is in small bites. I much prefer to fill my plate with appetizers so that my taste buds can enjoy a variety of flavors. I used to joke around that I wanted to open a restaurant called “Smorgasbord” and serve only appetizers That was before I knew Tapas existed.
A few weekends ago I had the pleasure of entertaining some of my family for a Stella & Dot jewelry and a birthday party for my amazing mother. I love to entertain and wish I could do it more, but our condo is pretty small. One day soon we will have a house and I will be doing a lot more entertaining!
For now, entertaining in my condo will have to do and I thought my little get-together was a perfect time to try out this protein packed, low-carb and gluten free recipe. These healthy chicken skewers have just the right flavor and are perfect when paired with the tzatziki sauce. Finding an appetizer that is both satisfying and filling is always a plus. You will get a double dose of protein from the chicken and greek yogurt. They make for a perfect appetizer or you can use them with a salad for a full meal.

Ingredients
Tzatziki
- 1 large english cucumbers, peeled, seeded and diced
- 2 tablespoons olive oil
- 1/2 lemon, juiced
- 1 teaspoon salt + ground pepper, to taste
- 2 tablespoons fresh dill [dried]
- 2 garlic cloves, minced
- 2 6 oz containers of Plain Non-fat Organic Oikos Greek Yogurt
Chicken
- 4 boneless chicken breast
- 1/2 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried dill
- 1/2 lemon, zested and juiced
- 1 Tbsp olive oil ( I added this to her ingredients for a healthy serving of fat)
- ground pepper
note: skewers are needed for this dish
Directions
Tzatziki
Cut the cucumber into slices and use a few paper towels to absorb the excess water in the cucumber. Gently press the paper towel to the cucumber. Then cut into small pieces and put to the side. In a separate bowl combine all remaining ingredients for the tzatziki sauce. Mix together and add the cucumbers. Put in the refrigerator to let all the flavors marinate together for at least an hour.
Chicken
Cut chicken into small cubes, about 1 inch wide and thick. Combine all other ingredients in a separate bowl. Place cubed chicken in a ziplock bag and add the marinade. Seal the bag close and shake to let the marinade cover all of the chicken. Place in the fridge for 1 hour.
Preheat oven to 350F.
Skewer chicken and place on a non-stick baking sheet. If I am making these for a party I cut the skewer in half and put three pieces of chicken on each stick. This will provide more skewers to go around at the party. Bake for 16-18 minutes until chicken is cooked through – cooking time may fluctuate depending on how thick the chicken pieces are.
Let chicken cool and place on a platter with the tzatziki sauce. Your guests are sure to enjoy this simple, but refreshing recipe!
